- In a small bowl, combine the garlic powder, paprika, kosher salt, chili powder, and onion powder. Stir well and set the seasoning mixture aside.
- In a separate bowl or measuring cup, whisk together the honey, apple cider vinegar, minced garlic, and sriracha until smooth.
- Heat a large skillet or cast-iron pan over medium-high heat until hot.
- If needed, remove the skin from the salmon, then cut the fillet into evenly sized 1-inch cubes. Pat the salmon dry with paper towels for the best sear.
- Place the salmon cubes in a large mixing bowl. Sprinkle the prepared seasoning blend over the salmon and gently toss until each piece is evenly coated.
- Add the coconut oil to the hot skillet. Arrange the salmon cubes in a single layer, leaving a little space between each piece. Cook undisturbed for about 1 minute to develop a golden crust.
- Carefully flip the salmon pieces, then pour the prepared honey garlic sauce into the skillet. Gently stir the salmon so each piece is coated in the glaze. Continue cooking for another 1 to 2 minutes, allowing the sauce to bubble and thicken until it forms a glossy coating on the salmon.
- Remove the skillet from the heat and let the salmon rest for 2 to 3 minutes. This helps the glaze thicken slightly and allows the flavors to come together. Serve immediately with steamed rice, quinoa, noodles, or your favorite vegetables.
