Life has been wonderfully busy, and staying ahead of the holidays can be a challenge. Somehow I might forget the little things during the day, but I always seem to remember exactly what needs to be done at home. Thankfully, this festive Easter fudge is one of those recipes that’s quick, easy, and perfect for getting into the holiday spirit without spending hours in the kitchen.

Ingredients
  

Chocolate Layer
  • cups semi-sweet chocolate chips
  • 7 ounces full-fat sweetened condensed milk about half of a 14-ounce can
  • 2 tablespoons marshmallow creme or marshmallow fluff
White Chocolate Layer
  • cups white chocolate chips
  • 7 ounces full-fat sweetened condensed milk about half of a 14-ounce can
  • 2 tablespoons marshmallow creme or marshmallow fluff
  • 1 teaspoon pure vanilla extract
  • cup colorful Easter sprinkles plus 1 extra tablespoon for topping
  • 1 cup Cadbury Mini Eggs lightly crushed or left whole for garnish

Method
 

  1. Line an 8 × 8-inch square baking pan with parchment paper or aluminum foil, leaving an overhang on two sides for easy removal after the fudge has set.
  2. Reserve about 9 Cadbury Mini Eggs to keep whole. Roughly chop the remaining mini eggs into small and medium pieces for the topping, then set them aside.
  3. In a medium saucepan over low to medium heat, combine the semi-sweet chocolate chips, half of the sweetened condensed milk, and the marshmallow creme. Stir constantly until the mixture is completely melted and silky smooth.
  4. Pour the chocolate mixture into the prepared pan and spread it into an even layer using a spatula. Set aside while preparing the second layer.
  5. In another saucepan, combine the white chocolate chips, the remaining sweetened condensed milk, and the marshmallow creme. Heat gently, stirring continuously until smooth. Remove from the heat and mix in the vanilla extract.
  6. Carefully fold in the ⅓ cup of Easter sprinkles with just a few gentle strokes. Avoid overmixing so the colors stay vibrant instead of blending into the fudge.
  7. Spread the white chocolate mixture evenly over the chocolate layer.
  8. Sprinkle the remaining tablespoon of sprinkles across the top. Arrange the whole Cadbury Mini Eggs evenly over the surface, then scatter the chopped mini eggs around them for extra crunch and color.
  9. Cover the pan and refrigerate for at least 4 hours, or leave it at cool room temperature overnight, until the fudge is completely firm.
  10. Once set, lift the fudge out of the pan using the parchment or foil overhang. Peel away the lining and place the fudge on a cutting board.
  11. Using a sharp knife, cut the fudge into 1-inch squares. If it’s very cold from the refrigerator, let it sit at room temperature for 15–20 minutes before slicing for cleaner cuts.
  12. Serve immediately or store in an airtight container in the refrigerator for up to one week.

Notes

  • Use full-fat sweetened condensed milk for the creamiest texture and best results.
  • Melt the chocolate over low to medium heat, stirring constantly to prevent scorching.
  • Fold the sprinkles into the white chocolate layer gently. Overmixing can cause the colors to bleed.
  • For neat, even layers, spread each chocolate mixture with an offset spatula or the back of a spoon.
  • Lightly crush some of the Cadbury Mini Eggs for extra texture while leaving a few whole for a festive presentation.
  • Chill the fudge until completely firm before slicing. This helps create clean, smooth squares.
  • If the fudge is too hard to cut straight from the refrigerator, let it rest at room temperature for 15–20 minutes first.
  • Store leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months. Thaw in the refrigerator before serving.
